Reverse polarity in my 5.7 Volvo Penta

Last spring (in the process of starting to de-winterizing our boat) my husband accidentally hooked up the dual battery cables backwards and tried to start our 5.7 Volvo Penta engine. The smoke and burnt wires were immediately visible. Frustrated I just covered the boat until I could figure out and afford to repair the problem this Spring.

My question is what are the proper steps to trouble-shoot the "french fried wires" and components and what is the potential cost and time to replace all the things that could have gone bad?
