replace decking?

I have a 1989 16 ft Sea Ray Bowrider. It was a great boat until I neglected it outside in Fl. sun and rain. Unfortunately, the deck began to get soft and I lifted it to find that the foam filler had been inproperly installed and a small pond of water about 5 gal. had been retained their for years, rotting out the flooring. Can I stip out the interior decking and gas tank, replace with Marine plywood and fiberglass the decking up the walls. Sea Ray sent me a new role of carpet to make up for the defective design. The IO only has about 100 hours on it and I'd llike to either get top dollar or keep it. Any guidelines on redoing the interior deck myself. ie. Keep the boat in a frame so the fiberglass hull retains it's shape. Should I use Oak rather than marine plywood? I am a very skilled finish carpenter and so woodwork is not problem. I just need some guidance.
