17 ft hydra sport x270 - 90 Mercury problems when I turn !!!

i have a 17 ft hydra sport x270 with a 90 merc . jackplate . just got it put togehter and running . while at speed 30 mph or so and i try to turn it looses bite and the rearend slides out . lowered my engine 1/2 inch and it didnt help . did slow it down . sometimes it will do it going straight .any ideas
